What a pleasure and privilege to be writing this monthly recipe and lifestyle column for my CenterPoint Heroes monthly publication! I have so much to share that I had a tough time trying to figure out what to start the September 2015 issue with…but then, it’s Fall isn’t it and the kids are back in school. So let’s kick off the season with deep rich colors and go with a Korean Yam & Black Bean Pattie. Korean Yams are a bit firmer and drier than regular sweets but I actually like them and their texture better than the regular supermarket varieties. Give them a try and let your taste buds be your guide. You can find these quirky looking darlings at HM Market on Blalock just north of I-10 and you won’t have to guess because the sign actually reads ‘Korean Yam’. If you make the trip, you may as well experiment and try the Purple Yams as well. Just treat them like a regular ol’ sweet potato. Foodie or not, a shopping trip to HM can prove to be quite an adventure and you will definitely feel like you have entered another port of call.

Special Diets  I chose this recipe for many reasons. I cook for for a client who is gluten and lactose intolerant, and this hearty recipe is perfect if you are dealing with these situations. A simple ingredient exchange.. almond flour instead of flour, the organic recipe becomes preservative, sugar, gluten, dairy free…with no deprivation.

Time Saving Tip  Double the recipe! Make the patties and freeze half for another meal. These are perfect room temperature and provide a nutritious school lunch. Just add some fruit or celery sticks, cucumber slices, cherry tomatoes.
Serving Suggestions…Always a Rainbow of Color

Place on a bun with lettuce, tomato, avocado; on a bed of mixed greens, blanched asparagus, baked beets and a zippy avocado dressing. A simple red cabbage slaw with crisp apples, walnuts and a lime mayo dressing is also a great partner. Persian cukes and Spanish onion in apple cider vinegar, water, your favorite organic sweetener, mustard seeds, cloves, Himalayan salt and pepper…whatever spices that tickles your pickle palate!

Substitute  ‘Ditch the bread’ for a sautéed or baked portobello mushroom and enjoy the pattie as an open face sandwich! Choose your side dishes and enjoy.
